Agua Fresca de Piña
Today it is hot in DC—heat alert type of hot to be precise. So the perfect antidote came to me in the form of a super refreshing drink that could lift me up after a walk in the National Mall—not a brilliant idea, I know.
Yo don’t need a recipe for this, I’m sure. But i’ll just give you a few pointers: Fresh is key here for the pineapple and the ginger. They just reign supreme! The tincture gives depth and gives the agua the pass to adulthood ;). You can sub the agave syrup for other sweetener, from regular sugar, to simple syrup to light brown sugar.
For Cuatro 8-oz glasses you need:
2 cups of peeled and cubed fresh pineapple
Agave syrup to taste (check on the sweetness of the pineapple)
A good 2 to 3-inch knob of fresh ginger, peeled
Juice of half a lime
Ice
Sparkling water
Sichuan Peppercorn Tincture (Oooh my! we are getting fancy here). You can make it yourself and wait a week or you can use any bitters for the finishing touch. The alcohol in both is negligible but it you prefer to omit this, that’s ok.
How to make it:
Blend first four ingredients with 2 cups flat water, Strain, Serve on glasses, add more ice. Top with sparkling water and three dashes of tincture or bitters in each glass.
