Go ahead and binge on this one. Flavors are bright and addictive, and yet, VERY easy to make. Go ahead, here’s the no-recipe recipe.
In a bowl combine equal parts of cooked rice and cooked green lentils or other legume (chickpeas, peas, beans....). Make sure the lentils are the type you can cook al-dente. Yellow lentils won’t cut it for this recipe.
Blend up to 1 jalapeño, cilantro and parsley-a handful of each, juice of one lime, salt to taste, and a little water (1/4 to 1/2 cup). Should taste tangy, herbal, spicy. Adjust ingredients if needed.
Pour marinade into the rice/lentil bowl and mix gently.
Garnish with summer veggies in thin slices: raw veggies such as carrot, radish, cucumber, tomato, zucchini, etc...—Basically, anything and everything from the summer’s bounty. You don’t need more than one of each to make two bowls.
Pro tip: put sliced veggies in a bowl of water with a dash of salt and lime juice until it’s time to dress your dish. They’ll be crunchy, fresh and flavorful.
